Rivals for the title include a 144-pounder reportedly sighted at a jackfruit festival in the southern Indian state Kerala in 2010. Kerala is where the American poet and essayist Aimee Nezhukumatathil first tasted jackfruit, at age 8. Then they watched her devour jackfruit and understood that she was one of them after all. But in 2020, when grocery supplies were running low during the pandemic, she spotted canned young jackfruit at the local store. “It’s about as close as you can get to tearing into flesh,” Nezhukumatathil says.

Yoo first tasted the cake in elementary school in Queens, on a day students were asked to bring in a dish from their heritage. He tried different brands of Thai tea and decided that a minimalist version, with just tea, vanilla and food coloring, would be best. Yoo goes so far as to leave the cake in the refrigerator for two nights, flipping it in between. The cake is finished with whipped cream, coconut flakes toasted near gold and lime zest with its bright sting.

True vanilla is a demanding crop, so labor-intensive that at times the market value of the beans has surpassed that of silver, weight for weight. And since each bean yields only 2 percent vanillin at best, the cost of pure vanilla is even higher. The vanilla bean on my desk comes from the small Hawaiian town of Laie on Oahu’s North Shore. It’s longer and darker than the other vanilla beans in my cupboard, its fragrance more insistently narcotic. To begin with, while the vanilla orchid — planifolia is the species most widely grown — is a hermaphrodite (like most flowering plants), with both male and female parts, it can’t pollinate itself.

Hello from Atlanta, where school started a month ago and we are deep into packing lunches, working hard and trying to ignore the recent courthouse shenanigans that seem to keep Georgia on everybody’s mind. By some estimates, nearly 95 percent of the crop was lost largely because of a hard and untimely freeze. But we Georgians have 40 commercial varieties, all of them ripening to a deep sugary tang under the hot Southern sun. I cherished the few peaches I did get, even though they were crazy expensive and weren’t as sweet or as ripe as usual. The brilliant Ligaya Mishan, a columnist for The New York Times Magazine, came to my rescue with a recipe to grill them (above).

A New Recipe for a Very Old Hummus

There’s some very nice writing about recipes in The New York Times Magazine this week, not surprisingly under the byline of Ligaya Mishan. Her subject is a hummus recipe (above), dating back to 13th century Syria, that Lucien Zayan of the Invisible Dog Art Center in Brooklyn served at a dinner series he runs, la Salle A Manger. We don’t have a lot of recipes that are so old. In fact, Ligaya reports, there is no documentation of hummus recipes after the 14th century until the late 19th century. But hummus endured, as Ligaya explained beautifully: “A recipe existed only in the doing, the way that the ‘Odyssey’ once existed only in the telling, made new each time, revised, embellished, its glory subject to the seemingly boundless human capacity for error and its counterpart, invention.”Featured RecipeView Recipe →

You take chickpeas, hard and dry, and boil them until their skins loosen and they reveal themselves, tender little hulks with souls of butter. For much of human civilization, recipes were rarely written down, and of those that were, almost none have survived. You might recognize this as hummus. Notably absent from the recipe is garlic, despite its ubiquity in the cooking of the Arab world at the time. It’s not certain exactly when garlic was introduced to the dish: Nasrallah notes that there is no documentation of hummus recipes after the 14th century until the late 19th century.

The base was always strawberry, the rosy slush whorling down into the cup. Halfway through, Mr. Young would stop the machine and spoon in the liquid skimmed off a jar of li hing mui, a local snack of preserved plums soused on a brew of sugar and licorice. Neale Asato loved that li hing Icee, too. It was the inspiration for his li hing float, a meld of strawberry sherbet and vanilla ice cream with hidden seams of li hing sauce, one of the best sellers at Asato Family Shop in downtown Honolulu. Freeze to a slush, then whip on high speed, letting in the air until it expands, a pink cloud rising.

You could serve the peppers with Jesse Szewczyk’s green salad with sour cream and onion dressing. It’s a bright and punchy salad with onion dip vibes, and Jesse makes the whole thing even more fun with an optional crunchy potato chip topping. Another low-pain-big-gain dish that flaunts A-list seasonal produce is Christian Reynoso’s verdant asparagus ricotta pasta, adorned with a lemony almond crumble. When combined with pasta water, the ricotta thins out into a creamy sauce that coats the pasta and crisp-tender asparagus spears, with the nuts adding even more texture. A dash or two of hot sauce right at the end adds just the right zip.
What of the worlds that lie between slime and velvet, collapse and refusal, succulence and desiccation? Not only does English lack a robust vocabulary for food textures but, whether as corollary or coincidence, English speakers also tend to value a narrower range of textures. In a survey by the American sensory scientist Jeannine F. Delwiche conducted at Ohio State University in 2002, respondents considered texture significantly less important than taste and scent in its impact on flavor. It is often defined as a confluence of taste, scent and memory, yet other senses intrude. Studies have shown that diners have difficulty identifying flavors when foods are dyed different colors, for example.

What kind of cheesecake withstands burning and triumphs, and sears itself into the memories of child and worldly wise alike? The ingredient list is brief: for the filling, only cream cheese, sugar and vanilla extract. Oklahoma State University even features a recipe on its website, one of seemingly countless online. Kitsopoulos took a recipe from Pillsbury, developed by Deborah Harroun, the writer of the Taste and Tell blog. Where Pillsbury advises first rolling out the dough for the topping on parchment paper, she just plops it on.
Medical device makers, like many manufacturers, have faced challenges over the last year from inflationary supply chain costs, staffing shortages and the strong dollar impacting sales overseas. However, since 2007 the device sector ETF has averaged a gain of 14% per year, 6 percentage points better than the broader market index over the same period. More than 60% of analysts rate the shares a buy, with a mean price target implying 34% upside. Nearly 90% of analysts rate the stock a buy, with mean price target of $53, implying more than 30% upside. BTIG analysts Marie Thibault and Ryan Zimmerman think that M & A could be another catalyst for the medical device sector in 2023, with robotic surgery players likely to be of particular interest.
